Our Terroir

From Mediterranean hills to the edge of the Sahara: the Tunisian landscape, its olive varieties and the harvest that shapes every Elixerra lot.

Tunisia is one of the oldest olive-growing countries on earth and, in the 2025/26 campaign, the second largest producer in the world. This is the ground our oil comes from.

The country runs from Mediterranean hills in the north to the edge of the Sahara in the south, and the olive follows it the whole way. That range is why a single country can give you a delicate Chemlali and a fiercely green Chetoui in the same season.
